Tasty Tuesday: Home Made Vegetable soup

Today is the birthday of my sister and after she had the flew for 3 days she wanted to eat something that is not heavy on the stomach. So she wanted our home made vegetable soup. The rule in this house is when it is your birthday you can choose what you would like to eat. So here we go: 



Groentesoep met gehaktballetjes

Ingredients: 
300 grams meat special for soup

1½ liters of cold water
2 Tbsp salt
2 bay leaves
2 sprigs thyme
3 pieces of mace
2 black peppercorns
200 grams carrots
3 stalks celery
1 leek
2 parsley
1 biscuit
200 g of minced beef
1 pinch of nutmeg
50 grams of vermicelli


Preparation: 

Place in a big pot the meat with the water and the salt to the boil. Add the bay leaf, thyme, mace and peppercorns and simmer, covered, for about 4 hours.
Meanwhile, cut the carrots, celery and sliced the leek in rings. Chop the parsley. Crumble the biscuit over the minced meat and sprinkle nutmeg on top.
Bring the minced meat to taste with pepper and salt and knead well. Make small balls of minced meat. place them covered in refrigerator.
Take the meat out of the soup and cut it into small pieces. Add the carrot, celery and leeks to the stock and bring it to a boil for about 10 min. Add the meatballs, vermicelli and parsley and cook for about 5 minutes. Cover the pan and cook it till you ready to eat.. Season it off with pepper and salt.
