On the last day of the week we all want a little bit of extra sugar before we start a week of healthy food again. So for this week Sinner Sunday recipe : White Chocolate truffles MMMMM!!
What do we need:
1 piece of fresh ginger ( I recommend around 4 cm )
1 cup of whipping cream
150 grams dark chocolate 72%, roughly chopped
1 tsp instant coffee espresso
50 grams of butter (at room temperature)
200 grams of white chocolate
200 grams white chocolate with rice crisps
and powdered sugar
Let's start this Chocolate adventure:
Cut the ginger into slices. Bring the cream with the ginger to a boil. Remove from the heat and cover the pan with a lid and simmer for at least 30 min.
Bring the cream back to boil then remove from the heat and dissolve the chocolate, instant coffee and butter. Stir constantly. Allow it to cool to a good room temperature, then remove the ginger. And cover it with a lid and put it in the refrigerator for approximately 4 hours.
Place on a cookie plate baking paper and form with the 2 teaspoons balls of about 1 1/2 cm of the dark chocolate mixture. Scoop them on the paper. Put the baking sheet in the freezer and let the balls freeze for 30 minutes. ( If the cookie plate does not fit in the freezer, use then a big plate)
Melt the 2 types of white chocolate together. Remove the cookie plate from the freezer and dip the balls in the white chocolate using two forks. Do this quickly, otherwise there remains dark chocolate behind. Put the truffles in the refrigerator and leave them for another 30 min. To make them hard.
Sprinkle them lightly with powdered sugar for the finishing touch.
You can also make them a day ahead, but make sure to keep them in the refrigerator.
