So to help each other out here are some amazing detox salads that are easy, quick, super healthy but most all helping us to make this resolution come true!
The first one is full of protein for a strong body and is a real green delicious monster:
What do we need for the protein strong body salad:
For the Dressing:
1/4 cup extra virgin olive oil
1/4 cup red wine vinegar
1 tsp salt
1/2 tsp pepper
1-2 tsp honey
1 garlic clove, minced
And for the salad we will need:
2 cups cooked skinless, boneless chicken, cut into cubes
1 can (15 oz) chickpeas, drained & rinsed
1 large green pepper, diced
1 cucumber, seeds removed and diced
5 plum tomatoes, chopped
1 cup fresh cilantro, chopped
1/4 cup fresh chives, minced
LET'S COOK:
Combine & mix all of the salad dressing ingredients. And set aside.
And then in the bowl, add all of the salad ingredients. Pour 2 tbsp of salad dressing on each salad portion or more if you like..
I had to tell you one other recipe that is as good as the other one only let's say it is green really GREEN!
What do we need:
1/4 of a cabbage
1/4 head of broccolli
1/8 cup pistachios
1/4 cup chopped celery
2 large cucumbers
1/2 avocado
juice from 1 lemon
1 tbsp. extra virgin olive oil
salt and pepper to taste
And now how do we make this green goodness:
Mash the avocado with the lemon juice and olive oil. Add salt and pepper to taste.
Make cucumber noodles with a veggie peeler or spiralizer.
Chop the rest of ingredients and toss them in a bowl with the avocado dressing.
