Something red something flavorful something super healthy full of vitamins!
Its really easy to make and I can highly recommend it to everyone.
Ingredients:
4 tablespoons sunflower oil
1 clove garlic, finely chopped
2 cm ginger, peeled, finely chopped
1 stalk celery, chopped
1 large carrot, removed, diced
450 grams of cooked beets, peeled and cubed
1 teaspoon coriander powder
1 teaspoon cumin
1 liter vegetable stock
100 ml coconut grater
juice of 1/2 lemon
2 spring / spring onions, thinly sliced
Preparations:
Heat the oil in a large pan and fry the garlic, ginger, celery, carrots and beets for about 5 minutes.
Add the coriander and cumin and cook for a few minutes .
Pour the vegetable stock to the pan, bring to the boil and let the soup simmer for about 20 minutes.
Pour the coconut milk and puree the soup in a blender.
Strain the soup and season with lemon juice, salt and pepper. Pour the soup into bowls and sprinkle with green onion and lemon zest.
